Bilberry Chia Pudding Parfait

 Looking for a sweet and creamy treat that also is packed with things that are good for your body and health too?!  If the answer is yes, then this is the recipe for you!

Bilberry fruit and powder is antioxidant rich and well respected for its anti-aging properties. 

This herb has many health benefits packed inside this little purple berry! 

Chia seeds are a gem themselves...they are a high-quality protein that are also antioxidant rich!  This recipe is a fun and delicious way to get the health benefits while enjoying a sweet treat that is as good as it looks!

Perfect for a springtime dinner party or a summer Fourth of July bash. these are quick and easy to whip up and also not hard to do large batches or multiples.

INGREDIENTS

1/3 cup chia seeds

1 cup almond milk ( mine was sweetened and had vanilla)

3 Tablespoons Bilberry fruit powder

1 Teaspoon Vanilla

Vegan Whip of your choice

Vegan/gluten free chocolate granola

raspberries

blueberries

coconut shavings

 

 Whisk together the chia seeds, almond milk, vanilla and bilberry powder.  Let sit in the fridge at least 4 hours or ideally overnight.

 

With your parfait glasses of choice, you can begin to layer all this goodness together....

 I would begin with a layer of the bilberry chia pudding, some berries, whip, more berries, granola and more whip...then repeat as you wish.  I topped the parfait with whip, berries and coconut shavings.

This are also great to put together in plastic to go cups with lids and have on the go or a picnic!
