Gluten Free Moringa White Chocolate Chip Scones

 

I know we may have missed St. Patrick's Day, but these delicious, gluten free, bright green scones seem too good to be true and I can't help but pinch myself!

The beautiful color and secret ingredient is Moringa Powder.  Known for being the queen of superfoods and a complete protein that packs a punch of 46 antioxidants and 18 amino acids! 

This is just a nutrient rich herb, and it is incorporated in such a delicious way in these scones.  These are gluten free and vegan.  I'd recommend brewing a pot of tea to have ready for these little emerald gems!

2 Cups Gluten-Free Flour 1:1 with xanthan gum

2 Teaspoons Baking Powder

2 Tablespoons Moringa Powder

1/2 Teaspoon Salt

3 Tablespoons Melted Coconut Oil

5 Tablespoons Unsweetened Plant Milk ( I Used Almond Milk)

1/3 Cup Pure Maple Syrup

1 Teaspoon Pure Vanilla Extract

1/3 Cup Vegan White Chocolate Chips

 

GLAZE

1/2 Cup Vegan Confectioners Sugar

1-2 Tablespoons Plant Milk

Splash Of Vanilla Extract

 

First off let's preheat the oven to 350 degrees Fahrenheit and line your baking sheet with parchment paper.  

In your large mixing bowl stir your dry ingredients together, flour, baking powder, Moringa and salt.

 

Add in the melted coconut oil, plant milk, maple syrup, vanilla extract....

 Stir together....

Fold in the white chocolate chips.

 

I had to use a little extra almond milk to make the dough wet enough to form into ball.......

..just watch your consistency and see if you need it and then shape the dough into a ball.....

Place the dough on the baking sheet lined with parchment and press out into an 8 inch circle.  You can use a rolling pin if you prefer, but I used my hands and pressed it out and it worked great.  

Use a knife and begin cutting the circle into triangle shaped pieces and place 1-2 inches apart on baking sheet.

I added a few extra White Chips on top before baking.

Bake 14-18 minutes or until they have risen a little and have firm edges.  Let cool 5 minutes.

While those are cooling go ahead and whip up that glaze recipe that is going to be the pretty topper to these treats.

Once they are cooled go ahead and drizzle that glaze all over the scones and let them sit a bit and the glaze dry.

Now go get that hot cup of tea and enjoy this lucky treat!
