We are featuring a zesty dressing, with tang and a burst of citrus. The gem in this easy recipe is Goji Berries, long praised for it's vitamins, amino acids, zinc, iron, calcium, and polysaccharides. They have a higher carotenoid content than Black Goji and an ounce of this power-packed berry contains 2x your daily allowance of Vitamin C, and its nourishing properties have been traditionally appreciated for reducing fatigue and stress!

Ingredients-
1/3 cup Goji Berries (soaked in warm water for 10 minutes)
2 tablespoons chopped shallots
1/3 cup olive oil
1/4 cup apple cider vinegar
2 tablespoons maple syrup
handful fresh parsley
1 orange
salt and pepper to taste
Toss all ingredients into a blender and mix until completely smooth.
Taste and add salt and pepper as needed.
Grab all your favorite veggies and salad toppings and begin to build and top with your fresh dressing.
