Makes: 2 servings

1/2 cup frozen strawberries
1/2 cup frozen red raspberries
1/2 cup pineapple juice
1/2 cup rehydrated red goji berries
1 banana
5 oz unflavored coconut yogurt
1 can coconut milk

In a chilled bowl, add the cream from the top of the coconut milk. Whip with a hand mixer until fluffy. Set coconut milk aside. Add all remaining ingredients to the blender. Blend thoroughly. Pour into serving glass layering with coconut milk. Top with whipped coconut cream and a few re-hydrated Red Goji berries.

To re-hydrate the Red Goji, pour boiling water over them and allow them to plump up (5-10 min). You can add slices of lemon, ginger and cinnamon sticks to the water before boiling for extra flavor. Strain the berries and add to smoothie.
