  • Oh la la Strawberry Cheesecake

    This cheesecake is so delicious your guests won't even know it's gluten free!

    Chocolate Crust

    WHAT YOU'LL NEED

    • 3/4 cup Raw Honey, melted
    • 1/2 cup almond flour
    • 2 eggs
    • 1/3 cup raw Cacao powder
    • 1 1/4 tablespoons (dried) instant coffee granules
    • 2 1/4 teaspoons vanilla
    • 1/4 teaspoon Sea Salt
    • 1/4 teaspoon baking powder

    HOW TO MAKE...

    1. Preheat oven to 325° F.
    2. Combine all ingredients except for the eggs into a bowl. Then add the eggs one at a time and mix after each addition.
    3. Place dough in the center of a 11-12” springform pan. It works best if you wet your hands before pressing the dough gently outwards; as the honey does make for a very sticky dough. Bake for 20 minutes.

    Strawberry Cheesecake Filling

    A less heavy version of the original, this cheesecake is sure to satisfy your cravings; but with less of the calories!


    WHAT YOU'LL NEED

    • 2- 8 oz. packages cream cheese
    • 3/4 cup cottage cheese
    • 1/2 cup honey flavored greek yogurt
    • 1/2 cup sour cream
    • 1 1/4 cups strawberries
    • 2 teaspoons vanilla
    • 1/4 cup maple syrup
    • 3 eggs

    HOW TO MAKE IT...

    1. Set a shallow pan of water on bottom rack of oven and preheat oven to 325° F.
    2. Process strawberries and cottage cheese in a blender until smooth.
    3. Add in and blend remaining ingredients, except for eggs, which should be added one at a time, and gently mixed by hand.
    4. Pour cheesecake into prepared crust and bake for 1 hour and 15 minutes.
    5. When completely cooled, remove cheesecake from pan and decorate with chocolate syrup and sliced strawberries. Enjoy!

    HOW TO MAKE IT...

    1. Place all ingredients in a saucepan and simmer on stovetop until smooth and thickened). Let cool before using.

    WHAT YOU'LL NEED FOR ~ BROWNIE CRUST

    HOW TO MAKE IT...

    1. Preheat oven to 325° F.
    2. Line the bottom of an 11-12" cheesecake springform pan with parchment paper.
    3. Combine all ingredients except for the eggs into a bowl. Then add the eggs one at a time and mix after each addition.
    4. Place dough in the center of the pan. It works best if you wet your hands before pressing the dough gently outwards as the honey does make for a very sticky dough.
    5. Bake for 20 minutes. As soon as possible after baking, slide the parchment with the brownie to a cooling rack to cool completely and remove parchment paper.

    WHAT YOU'LL NEED ~ FOR CHEESECAKE FILLING

    • 4 (8 oz.) packages cream cheese, softened (don't use non-fat)
    • 3/4 cup + 1 tablespoon Honey
    • 4 eggs
    • 1/2 cup + 1 tablespoon sour cream
    • 2 tablespoons kahlua SF syrup
    • 1 tablespoon vanilla extract
    • 1 tablespoon lemon juice

    HOW TO MAKE IT...

    1. Preheat oven to 300° F.
    2. Grease bottom and sides of an 11-12" cheesecake springform pan or line with parchment paper.
    3. Combine cream cheese and honey and beat well, until fluffy.
    4. Add eggs one at a time and mix just until combined after each addition.
    5. Add sour cream, kahlua syrup, vanilla, and lemon juice. Mix just until combined.
    6. Pour into pan and place in the center of the oven. Bake for 65-75 min. Let cool completely!

    To prevent cracks, place a shallow pan of water on the rack below during baking.


    WHAT YOU'LL NEED ~ FOR CHOCOLATE MOUSSE

    • 1 teaspoon unflavored gelatin
    • 1 tablespoon cold water
    • 1/3 cup Honey or maple syrup
    • 1 cup heavy whipping cream
    • 2 Tablespoons boiling water
    • 1/3 cup Cacao powder
    • 2 teaspoons vanilla extract
    • 2 1/4 to 2 1/2 teaspoons instant coffee granules

    HOW TO MAKE IT...

    1. In a small bowl, combine cold water with gelatin, until gelatin dissolves. Add boiling water, stirring to dissolve. Set aside. (Don’t do this step too far ahead or your gelatin will set up and make your mousse lumpy.)
    2. In a large bowl, combine sweetener, whipping cream, cocoa, vanilla, and cofee granules.
    3. Mix on high speed for 1-2 min until stiff peaks form, scraping the sides of the bowl to incorporate ingredients. Add the gelatin mix. Whip again for about a minute to incorporate. Refrigerate until needed.

    THE FINISHING TOUCH

    Remove cooled cheesecake from pan by carefully sliding to a flat plate. Gently place brownie layer on top of cheesecake layer and place a cake board or your serving plate on top of brownie layer. Holding on to both plates, flip it over so cheesecake layer is on top. Remove top plate and spread the mousse on the top and sides for a more “frosted” effect. Refrigerate for 2 to 4 hours or until firm.

    Makes 16 servings.

    2. Set jar on top of a towel in a crockpot filled with water, on the warm setting for 3 days. Watch water level and be very careful not to pour cool water on a hot jar, as this can cause it to explode.

    WHAT YOU'LL NEED ~ To Make Pucker Up Herban Chapstick

    • 1/4 cup Infused Oil

  • Frothy Real Food Hot Chocolate

    WHAT YOU'LL NEED

    • 4 cups milk (raw, goat, almond or coconut)
    • 1/3 cup Cacao powder
    • 1/4 cup Raw Honey or maple syrup
    • 1/4 cup grass-fed gelatin
    • 2 tablespoon grass-fed butter
    • 2 tablespoon coconut oil
    • 1 tsp vanilla
    • Whipped cream (optional)
    • Marshmallows (optional)

     

    HOW TO MAKE IT...

    1. Heat 3 3/4 cup of the milk in a small sauce pan. If you are using dairy, be careful not to let the milk curdle. For raw milk it is best to not let it get any warmer than 110 F to preserve most of the beneficial properties of the raw milk.
    2. In a small bowl or mug, mix the remaining 1/4 cup milk, gelatin, cacao powder, honey and vanilla. Stir with a fork or a small whisk until a smooth paste is formed.
    3. Once the milk is heated, pour the cacao paste into the milk and whisk until smooth. Add the butter and coconut oil. Blend with an immersion blender or pour into a blender and mix until frothy.
    4. Serve each cup of cocoa with a generous spoon of whipped cream and a sprinkle of cacao powder and cayenne powder. You could also serve your hot chocolate with a homemade marshmallow or two! Enjoy!

    WHAT YOU'LL NEED...

     

    HOW TO MAKE IT...

    1. Combine milk, cream, and lavender and bring to a simmer. Remove from heat, cover and steep for 30-45 min.
    2. Strain milk, then return it to saucepan, heat back to a simmer.
    3. Remove from heat and add chocolate/honey, salt and vanilla. Whisk together until chocolate is smooth.
    4. Pour into your fav mugs, top with whipped cream. Can be stored in fridge for up to a week. It's delicious!
